After spending twenty something years working as a Chef in restaurants pubs and hotels I have realised the joy I find in baking. Taking a step away from the chaos of kitchens into the calm early mornings of the bakery.
Which is where I found myself shadowing Jo from 'Jo's Loaves'. Jo made the art of open crumb look elegent and simple. A true Artisan. Now I am holding Jo's mantle and pushing forward with the business she so lovingly built. Using the techniques and wisdom Jo has shared with me I will continue to strive to bring great real sourdough to Offley Hoo Farm and surrounding areas.
